This is from my diet menu book. Even without the meat, this is a favorite in my family. When you cook it, the soft shell becomes slightly crunchy giving it such a great texture. Not to mention, it is so good for you! Read more ! Ingredients:
4 small flour tortillas |
1 c fat-free refried beans |
shredded cheese |
chopped fresh tomatoes |
shredded lettuce |
salsa |
sour cream |
Directions:
1. For each taco, place tortilla in a heavy skillet over medium heat. 2. Spread with refired beans. 3. Top with shredded cheese. 4. Cover and heat 1 to 2 minutes or until cheese is melted. (careful not to burn the tortilla) 5. Remove to plate. 6. Top with 2 tbsp. each tomato, lettuce and salsa. 7. Serve with sour cream if desired. 8. **** If made following the recipe, two tacos comes to only 245 calories, and is very filling. I do, however, somtimes like to add a little meat. When I do, I use ground turkey, to keep it low-fat, and it is sooooo good! |
