Wonderful mixture to serve over rice.Economical and delicious!! Ingredients:
2 tablespoons olive oil |
1 green pepper, chopped |
1 small onion, chopped |
1/2 cup chopped fresh cilantro |
1 teaspoon minced garlic |
1 teaspoon salt |
1 teaspoon cumin |
1/2 teaspoon cayenne pepper |
2 medium tomatoes, chopped |
1 (8 ounce) can tomato sauce |
1 can black beans, drained and rinsed |
1 can red kidney beans, drained and rinsed |
Directions:
1. Heat oil in large skillet. 2. Add next 7 ingredients. 3. Cook 5 minutes. 4. Stir in tomatoes and sauce. 5. Cook another 5 minutes. 6. Stir in beans. 7. Another 5 minutes! 8. Serve over a mound of rice. |
