This recipe is from the July 2006 Bon Appetit. Why soda jerk ? Because two kinds of pop lend the right dose of sweetness. The meat, various beans, tomatoes and bell peppers make for a colorful presentation. The first time I made it, I found the flavors great but it was also a bit sweet for my taste. Read more . The next time out, I cut the brown sugar amount in half, adjusted my spices somewhat and increased the cooking time to thicken the beans to my liking. I will include my changes with the recipe for comparison. It makes a lot - 10 cups - so invite some folks over for dinner. I'm sure you could use your crockpot to cook this or put the mix into a large casserole dish and into the stove. Enjoy. Ingredients:
2 cups 1/2-inch cubes cooked ham (any smoked sausage is good, can also use 2/3 lb. of cooked bacon, cut/torn in pieces) |
1 15-ounce can diced tomatoes in juice, drained |
1 15-ounce can pork and beans, rinsed, drained |
1 15-ounce can black beans, rinsed, drained |
1 15-ounce can butter beans, rinsed, drained (can use frozen) |
1 15-ounce can pinto beans, rinsed, drained |
1 large onion, chopped |
1 large red bell pepper, chopped (3/4 c. roasted red peppers are good here too) |
1 large green bell pepper, chopped |
1/2 cup (packed) dark brown sugar (note: i used 1/4 cup packed dark brown sugar and might even go a little lower than that) |
1/2 cup cola-flavored soda (can use root beer) |
1/2 cup lemon-lime soda |
2 teaspoons curry powder (i like 1 teaspoon garam masala and 1 teaspoon curry powder) |
1/2 teaspoon dried savory |
1/2 teaspoon garlic powder (i use 2-3 garlic cloves, minced) |
1/4 teaspoon cayenne pepper |
Directions:
1. Place all ingredients in heavy large pot. Bring to boil over medium-high heat, stirring until sugar dissolves. 2. Reduce heat to medium and simmer uncovered until juices are thick, stirring gently and frequently to prevent burning, about 20 minutes. 3. **NOTE: I cook mine over medium-low heat for about an hour. Just keep an eye on it, stir gently and adjust the heat as necessary. I have simmered the dish for up to 1 hour and 15 minutes and it was fine. 4. Season with salt and pepper. 5. Makes 10 cups. |
