Most soda bread recipes I've seen call for buttermilk so this one is a little different in its use of yogurt. It comes from Rosie Sykes, chef of the Sutton Arms restaurant in London. Ingredients:
350 g whole wheat flour |
100 g white flour |
50 g rolled oats |
30 g soft brown sugar |
1 teaspoon salt |
2 teaspoons baking soda |
30 g butter, softened and cut into chunks |
150 ml milk |
200 g plain yogurt |
Directions:
1. Preheat the oven to 180 degrees C. 2. Place the dry ingredients in a bowl, then rub in the butter. 3. Combine milk and yogurt, then pour into the bowl. 4. Quickly bring the mix together, adding more milk if it's a little dry. 5. Knead to distribute the baking soda evenly. 6. Shape into a round loaf about 15cm across. 7. Cut a deep cross on top, two-thirds of the way through the dough. 8. Place on a buttered tray and bake for 45 minutes. 9. Cool on a rack for 10-15 minutes. |
