Soba Noodle Salad

Soba noodles are made from buckwheat and wheat flours and have a brownish-gray color when cooked. From the CIA Culinary Institute of America salad that will tickle your palate and please your tummy.
Ingredients:
1 lb 4 oz soba noodles
2 tbsp rice vinegar
4 fl oz tamari
1 1/2 tsp light miso
4 fl oz sesame oil
3/4 oz sesame seeds, unhulled
1/2 t sp red pepper flakes
6 oz carrots, cut into fine julienne
4 oz green onions, thinly sliced on the bias
salt, as needed
ground black pepper, as needed
Directions:
1. Cook the noodles in boiling salted water until al dente. Rinse with cold water, drain, and dry.
2. To prepare the dressing, stir together the rice vinegar, tamari, and miso. Whisk in the sesame oil, sesame seeds, and red pepper flakes.
3. Toss the carrots and green onions in the dressing.
4. Pour the dressing over the pasta; toss, and adjust seasoning with salt and pepper.
