So Good For You Soup with Barley and Lentils |

Enjoy a rich and hearty soup. It grows as you cook it, so use a large pot. No fat in this soup. Treat yourself to a roll, because you can. Make it VEGETARIAN by trading the chicken broth for vegetable broth. Ingredients:
1/2 cup lentils,rinsed |
1/2 cup barley |
16 ounce tomatoes, no sodium |
1 cup onion, chopped |
1 cup celery, sliced |
3/4 cup carrots, sliced |
1 tblsp reduced-sodium soy sauce |
1/2 tsp pepper |
1 tsp dried dill weed |
1 tsp garlic powder |
5 cups organic low sodium chicken broth |
Directions:
1. Place all ingredients in a large pot. Bring to a boil. Cover and reduce heat to a simmer. Cook 50 Minutes, stirring occasionally. Add water if soup becomes too thick (I've never added water, I like it thick like a stew) 2. Makes 10 generous 1 cup servings. 2pp each. |
