These were very quick and easy to make and every one likes them. We actually liked them better the next day after they were refrigerated overnight. So I think next time I will make them the day before. Makes 36 but really don't think it will serve that many LOL Ingredients:
1 roll (18 oz) refrigerated sugar cookies |
4 eggs, slightly beaten |
1 1/2 cups sugar |
1/4 cup all-purpose flour |
1 tsp baking powder |
1/4 cup lemon juice |
1 to 2 tbsp powdered sugar |
Directions:
1. Heat oven to 350. 2. Slice cookie dough as directed on package. Arrange slices in bottom of ungreased 13 x 9-inch pan. With lightly floured fingers, press dough evenly in pan. 3. Bake 15 to 20 minutes or until light golden brown. Meanwhile, in large bowl, stir together eggs, sugar, flour and baking powder. Stir in lemon juice. Pour mixture over warm crust. 4. Bake an additional 20 to 30 minutes or until top is light golden brown. Cool completely, about 1 1/2 hours. Sprinkle with powdered sugar. For bars, cut into 9 rows by 4 rows. |
