Adapted from a few recipes I found around here and there. Uses a 8x8 pan, and some soy milk, traditionally, but you can use 0% fat free milk instead. Makes a great snack, and is actually quite low in sat. fats. You Ingredients:
2 cups oats |
2 cups nonfat milk (i prefer soymilk) |
2 eggs (or 4 egg whites, or egg replacer equaling 2 eggs) |
1 teaspoon baking powder |
1/8 teaspoon nutmeg (optional) |
1/4 teaspoon cinnamon (optional) |
1/4 teaspoon salt |
2 tablespoons honey (or 1 tbsp honey with 1 tbsp. sugar free maple syrup) |
1/2 cup dried cranberries |
1/2 cup dried cherries (optional) |
Directions:
1. Preheat oven to 375 degrees Fahrenheit (190 Celsius) and gently cover an 8x8 baking pan or dish with light cooking spray. 2. Combine all ingredients well in a mixing bowl, adding oats first, then eggs, spices, milk, honey/maple syrup and finally the add-ins. 3. Press mixture into the pan and bake for 30 minutes, or until oatmeal is golden brown. 4. (you can also add in 1/2 cup chopped nuts or 1/4 cup chocolate chips if desired). |
