This is fast and easy to put together. It can either be baked or heated in a slow cooker. Ingredients:
2 teaspoons canola oil |
1 cup onion |
1 cup carrot |
1 cup bell pepper |
1 cup zucchini |
15 ounces canned white beans |
15 ounces canned black beans |
15 ounces canned green beans |
45 ounces diced tomatoes with basil and garlic |
1 1/2 cups tortilla chips |
1/2 cup parmesan cheese |
Directions:
1. Heat oil in large pot. Dice onion,chop carrots, bell pepper and zucchini; saute 3 to 5 minutes stirring constantly. Mix in the canned beans and tomatoes. 2. Bake at 375. 3. Top with torilla chips and paramesan cheese; broil 1 minute. |
