SNOWFLAKE PUDDING This recipe came from an estate sale. I obtained it when I purchased the family collection from the Stinson Estate in Fort Worth, Texas in 1992.
Ingredients:
1 cup coconut
2 tablespoons granulated gelatine
1 pint whole milk
2 teaspoons vanilla
1/4 cup cold water
1/3 cup sugar
1/4 teaspoon of salt
Directions:
1. Soak gelatine in cold water for 5 minutes.
2. Heat milk then add beaten egg yolks and sugar and cook until slightly thickened.
3. Add gelatine then cook until mixture begins to thicken.
4. Fold in 2/3 cup coconut then add stiffly beaten egg whites and flavoring.
5. Spread remaining coconut on top and chill.
