Snow Topped Sweet Potatoes |

I have not tried these yet, just ran across the recipe today, but sounded interesting. The sweet potatoes are a 23 oz can whole, it would not let me list it this way. Ingredients:
1 (23 ounce) can sweet potatoes (whole, undrained) |
2 tablespoons butter |
1/4 cup pecans (chopped) |
8 pineapple rings |
8 large marshmallows |
Directions:
1. Heat potatoes in syrup, drain, reserving 1/4 cup syrup. 2. Mash potatoes with reserved syrup, add butter, (salt and pepper to taste) and pecans, cover to keep warm. 3. Place pineapple rings on cookie sheet, broil until hot. Top each with a mound of sweet potatoes, then a marshmallow. Broil 5-6 min, or until marshmallows are golden brown. 4. Serve immediately. |
