We love fresh snow pea pods and this recipe takes them to a new level. I could make a meal out of snow peas when they're prepared this way. Ingredients:
1/4 cup chopped green onions plus their tops |
1 tablespoon salad oil |
1/2 pound (about 2 cups) snow peas, or 1 7-oz package of frozen pea pods, thawed |
1 3-oz can of broiled mushrooms, drained |
1 chicken boullion cube |
1/4 cup boiling water |
1 teaspoon cold water |
1 teaspoon cornstarch |
2 tablespoons of toasted almond slivers |
Directions:
1. Cook onion in the oil until tender, but not brown. 2. Add pea pods and mushrooms; toss and cook over high heat 1 minute. 3. Dissolve the boullion cube in the boiling water. 4. Combine the cornstarch with the cold water; stir boullion and cornstarch mixture into the peas. 5. Cook, uncovered, over high heat until the mixture thickens. 6. Removed from heat immediately and toss with the toasted almonds. |
