Snow Peas and Feta With Orange Vinaigrette |

From the Star Tribune Ingredients:
12 ounces snow peas, trimmed |
1 large red pepper, cut into thin strips |
1 tablespoon extra virgin olive oil |
1 tablespoon orange juice |
1/4 teaspoon dijon mustard |
1/8 teaspoon salt |
1/3 cup crumbled feta |
Directions:
1. Bring a large pot of lightly salted water to boil. 2. Add snow peas and red pepper strips until brightly colored, about 1 minute. 3. Drain and rinse under cold temperature if not serving immediately. 4. Whisk together olive oil, orange juice, mustard and salt. 5. Stir in the feta and and toss with snow peas. 6. Serve room temperature or chilled. |
