3/4 of a cup is 2 points on Weightwatchers. Ingredients:
1 red onion, sliced and separated into strips |
4 tbsp canola oil |
2 sweet red peppers, juienned |
1 lb sliced mushrooms |
2 packages fresh snow peas (about 4 cups) |
salt |
provence seasonings or other mixture of herbs to suit your taste |
Directions:
1. Saute the onion in oil for 1-2 minutes. 2. Add peppers and cook for 2 more minutes 3. Stir in peas and mushrooms, saute for 3-4 minutes until vegetables are crisp tender 4. Add salt and herbs, stir in well. 5. Cover and simmer, stirring occasionally, until vegetables are done to suit your taste. 6. Serve hot. |
