Snow Pea and Napa Cabbage Slaw |

Adapted from a recipe by Barrett Ingredients:
1/2 lb snow peas |
1 1/2 lbs shredded napa cabbage |
2 carrots, shredded |
1 red bell pepper, thinly sliced |
3 green onions, chopped |
2 tablespoons lemon juice |
2 tablespoons rice wine vinegar |
1 tablespoon soy sauce |
2 teaspoons sugar (or equivalent amount of artificial sweetener) |
1 tablespoon toasted sesame oil |
1 tablespoon olive oil |
salt, to taste |
ground black pepper, to taste |
Directions:
1. In a large pot of boiling water, blanch snow peas 15 seconds, strain and transfer to a bowl of ice water to shock. Drain and slice thin. Combine with cabbage, carrot, bell pepper and green onion. 2. Whisk dressing ingredients together in a small bowl. Pour over vegetables, toss and refrigerate 2 hours before serving. |
