Snow Pea-and-Chinese Mushroom Stir-Fry |

Ingredients:
1 cup boiling water |
1 (.75-ounce) package dried black mushrooms |
2 teaspoons dark sesame oil |
1 (8-ounce) can sliced bamboo shoots, drained |
5 cups snow peas (about 1 pound), trimmed |
1/4 teaspoon salt |
1/4 teaspoon sugar |
Directions:
1. Combine 1 cup boiling water and mushrooms in a bowl; cover and let stand 15 minutes. Drain mushrooms, reserving 2 tablespoons soaking liquid. Discard mushroom stems; thinly slice mushroom caps, and set aside. 2. Heat oil in a wok or large nonstick skillet over medium-high heat. Add mushrooms and bamboo shoots; stir-fry 2 minutes. Add reserved soaking liquid, snow peas, salt, and sugar; stir-fry 2 minutes. |
