vegan-style Ingredients:
1/2 cup unsweetened applesauce |
1 1/2 cups whole wheat pastry flour |
1/2 cup sugar |
1/2 cup brown sugar |
1 tbsp cornstarch (plus water) |
1/2 tsp vanilla |
1/4 tsp baking soda |
1/4 tsp cream of tartar |
2 tbsp sugar |
1 tsp cinnamon |
Directions:
1. Preheat the oven to 375 degrees. Line cookie sheets with parchment. 2. Beat the butter with an electric mixer until fluffy. Add half the flour, 1 cup sugar, egg, vanilla, baking soda, and cream of tartar. Beat until combined. Beat in remaining flour. Cover and chill for 1 hour. 3. Combine the 2TBSP sugar and cinnamon in a bowl. Shape the dough into 1 inch balls and roll in the sugar mixture. Make sure you give them enough space to spread on a cookie sheet. Bake for 7 to 10 minutes. Cool on a wire rack. |
