Sneak the Veggies in the Meatloaf |

This is one way to get the 3 year old and the teenagers in our house to eat their veggies! Ingredients:
1 lb lean ground beef |
1 carrot, finely shredded |
1 celery, stalk, chopped finely |
5 cauliflower florets, chopped finely |
1 egg |
3/4 cup water |
1/2 teaspoon beef bouillon, instant |
10 soda crackers, crushed |
1 teaspoon onion powder |
1/4 teaspoon pepper |
Directions:
1. Preheat oven to 350 degrees. Spray loaf pan with cooking spray. Combine beef, carrot, celery, and cauliflower. 2. Mix the egg into the meat mixture. 3. Mix the boullion granules with the water until dissolved. Pour this into the meat mixture, mix until combined. Add the crackers, onion powder, and pepper. Mix well. 4. Press into the loaf pan and bake for approximately 45 minutes. I use a stone loaf pan, so your cooking time may be different if you use glass or metal pans. |
