Snapper Fillets With Herb and Caper Butter

A good and simple way to use all that snapper we've been catching! *an Aussie tablespoon contains 4 teaspoons!
Ingredients:
4 red snapper fillets
2 tablespoons oil
seasoned flour
90 g butter, softened
1 tablespoon finely chopped parsley
1 tablespoon finely chopped chives
1 tablespoon drained capers, roughly chopped
1 garlic clove, finely minced
2 teaspoons lemon juice
Directions:
1. Herb and Caper Butter:.
2. Combine all ingredients in a small bowl.
3. Snapper:.
4. Heat oil in a large frying pan.
5. Dust each fillet with seasoned flour and cook 2-3 minutes per side-or until done to your liking.
6. Serve fish at once with the savoury butter.
