Serve with prepared mashed potatoes and steamed green beans seasoned with butter spray and fresh parsley. Diabetic Exchanges: 3 meat and 1 vegetable. This came from Diabetic Cooking. I have not tried this, just posting for safe keeping. Ingredients:
1 lb extra lean ground sirloin |
1/8 teaspoon salt |
nonstick cooking spray |
1 medium onion, thinly sliced (4oz) |
3/4 cup water |
2 teaspoons beef bouillon granules |
1 teaspoon worcestershire sauce |
1/2 teaspoon instant coffee granules |
1/8 teaspoon black pepper |
Directions:
1. Shape ground sirloin into 4 patties about 1/2 -inch thick and 4 -inches in diameter. Sprinkle with salt. 2. Place a large nonstick skillet over medium-high heat until hot. Lightly coat skillet with cooking spray. Add patties and cook 3 minutes, turn and cook 3 minutes longer or until just barely pink in center. Set aside on separate plate. 3. Lightly coat pan with cooking spray. Add onions and cook 3 minutes or until tender, stirring frequently. Set aside with the patties. 4. Add the remaining ingredients to the skillet. Bring to a boil and continue boiling 3 minutes or until mixture measures 1/2 cup. 5. Return the patties and onions to the skillet. Turn patties several times to coat well and cook 1 minute longer to heat through. |
