Awesome way to eat okra. Enjoy Ingredients:
2 cups coarsely chopped green bell peppers |
2 tablespoons vegetable oil |
1 clove garlic finely minced |
1/2 cup chopped onion |
3 cups okra cut into 1/2 pieces |
1 teaspoon salt |
1 teaspoon freshly ground black pepper |
Directions:
1. Place peppers in a saucepan and add water to cover. 2. Add salt and bring to a boil then cook for 1 minute and drain. 3. Heat oil in a skillet and add the garlic and onion. 4. When onion is wilted add the okra then sprinkle with salt and pepper. 5. Cook stirring constantly for 10 minutes then add drained green peppers. 6. Cover and cook briefly. 7. The vegetables should be tender but they should retain a somewhat crisp texture. |
