A neat, nutty spritz cookie perfect for your holiday cookie platter from the Minnesota Scandinavian chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947. Ingredients:
1 egg |
1/8 teaspoon salt |
1/2 cup sugar |
1/2 teaspoon vanilla |
1/3 cup almonds, blanched and shredded |
2 cups flour, sifted |
3/4 cup butter, softened |
Directions:
1. Preheat oven to 400°F. 2. Beat egg, salt and sugar together until fluffy and sugar is completely dissolved. 3. Add vanilla and almonds and blend well. 4. Add flour and butter, kneading it when stiff enough to handle. 5. Force through a spritz cookie press onto a cookie sheet. 6. Bake for 8 to 10 minutes or until golden brown. |
