Smooth and Cheesy Omelet

Different type of chessy omelet
Ingredients:
olive oil or low-fat cooking spray, to grease pan
4 large mushrooms, sliced
1 tablespoon chopped hot green pepper (optional)
1/4 teaspoon dried basil
4 eggs (or low-fat substitute)
1/4 cup cottage cheese or 1/4 cup cream cheese (or low fat equivalent)
ground black pepper, to taste
Directions:
1. In oiled pan, saute the mushrooms and hot peppers.
2. Add the basil.
3. Beat the eggs and place them in a medium-sized oiled or sprayed skillet set over medium heat.
4. Flip when semisolid.
5. Pour in the mushrooms and pepper mixture.
6. Add the cheese and fold the omlet in half.
7. Cook until firm Add black pepper to taste.
8. Serve warm.
