Oh my, this is good! Smoky, cumin-y, spicy, smooth and creamy....and it's loaded with vitamins and stuff that's good for you! Great for the holidays.
Ingredients:
1 can garbanzo beans, drained and rinsed
2 cloves garlic, pressed
1 can pumpkin, canned
1/4 cup tahini
1/2 teaspoon cayenne pepper
1 teaspoon chipotle pepper, powdered
1 1/2 teaspoons cumin
2 tablespoons olive oil
5 tablespoons lemon juice, fresh
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1/3 cup plain yogurt, fage greek non-fat
Directions:
1. Process the beans and garlic until very fine and add the rest of the ingredients. Process until beautifully smooth.
2. Serve with blue corn tortilla chips for Halloween!
