Oh my, this is good! Smoky, cumin-y, spicy, smooth and creamy....and it's loaded with vitamins and stuff that's good for you! Great for the holidays. Ingredients:
1 can garbanzo beans, drained and rinsed |
2 cloves garlic, pressed |
1 can pumpkin, canned |
1/4 cup tahini |
1/2 teaspoon cayenne pepper |
1 teaspoon chipotle pepper, powdered |
1 1/2 teaspoons cumin |
2 tablespoons olive oil |
5 tablespoons lemon juice, fresh |
1 teaspoon kosher salt |
1/4 teaspoon freshly ground black pepper |
1/3 cup plain yogurt, fage greek non-fat |
Directions:
1. Process the beans and garlic until very fine and add the rest of the ingredients. Process until beautifully smooth. 2. Serve with blue corn tortilla chips for Halloween! |
