Smoky Guacamole Stuffed Tomatoes |

Sweet ripe tomatoes are stuffed with a creamy, slightly smokey guacamole studded with pepitas and smoked almonds. The guacamole is inspired by one of the ones at a nearby restaurant, Mezcal. Don;t feel like stuffing tomatoes? Read more ? Add some chopped, seeded tomatoes and serve with tortilla chips! Ingredients:
20 to 24 large cherry tomatoes (or campari) |
2 medium ripe avocados |
juice of 1 lime |
1/4 c finely diced red onion |
1 glove garlic, minced |
2 tbsp cilantro |
1 jalapeno, seeded and minced (or 1/4 tsp jalapeno powder) |
1/2 tsp cumin |
1/4 cup chopped smoked almonds |
2 tbsp pepitas (i used raw, but you can use slated/toasted) |
pinch chipotle chili powder |
salt & pepper to taste |
additional chopped cilantro, lime slices and pepitas for garnish |
Directions:
1. Slice tops off of tomatoes and scoop out seeds and flesh. Sprinkle very lightly with salt (optional) and place cut side down on paper towels to drain for about 5 minutes. 2. Meanwhile, mash avocado with lime juice. Stir in onion, garlic, cilantro, jalapeno (or powder) cumin, almonds, pepitas and chipotle chili powder. Season to taste with salt and/or pepper (go light on the salt if you salted the tomatoes) 3. Stuff tomatoes with guacamole, garnish as desired and serve. 4. Note: You can cut a very thin slice off the bottoms of the tomatoes if you're worried about them rolling around your serving platter. Or, slice some limes into circle and place one tomato on each lime slice - the little well at the center of the lime may be enough to keep them upright. |
