Perfect to prepare with and serve to grilled beef. Ingredients:
1 eggplant (fat) |
6 tomatoes |
1 onion (middle size) |
herbs (mint, dill, parsley), preferably fresh |
salt |
1/2 dl lemon juice |
1/2 dl olive oil |
Directions:
1. Grill the eggplant on an open fire until entirely soft (and probably black). Check with a fork or knife! 2. Let the eggplant cool down. 3. Chop up the tomatoes, onion and the herbs in to small pieces. 4. Peal the eggpland and chop it up as well. It might look like a mess :). 5. Put everthing in a bowl. 6. Add the lemon juice, olive oil, herbs and salt (more/less lemon juice and olive oil, it depends on your taste). 7. Mix everything and let it wait for about 10min before serving. |
