Smoky Chorizo And Navy Bean Soup |

A nice warming and hearty soup! Ingredients:
2 t olive oil |
6 ounces chorizo sausage, casing removed, crumbled |
1 medium red onion, thinly sliced |
2 cloves garlic, chopped |
1/2 t spanish smoked sweet paprika |
1 (14 ounces) can chopped tomatoes |
2 cups chicken or vegetable stock |
1 (14 ounce) can navy beans, drained and well rinsed |
1/2 cup chopped fresh flat-leaf parsley |
1/2 cup chopped fresh cilantro |
toasted baguette slices, rubbed with garlic, to serve |
Directions:
1. In a large saucepan, heat oil over high 2. Add chorizo, onion and garlic and saute for 5 minuted or until the chorizo has browned and onion has softened 3. Stir in paprika and cook for 1 minute 4. Add tomatoes and their juices, stock and beans 5. Bring to a boil 6. Reduce heat to a simmer and cook uncovered for 10 minutes 7. Stir in parsley and cilantro, then serve with garlic toasts |
