Want a potato salad with a kick? This is the one! Ingredients:
2 pounds red potatoes, cooked and sliced |
1/2 pound bacon, cooked crisp and crumbled |
3/4 cup mayonnaise |
1/4 cup barbecue sauce, your favorite bottled |
1 teaspoon brown mustard |
1 tablespoon apple cider vinegar |
1/2 red bell pepper, diced |
1/2 green bell pepper, diced |
1 celery rib, sliced thinly |
1/2 small red onion, diced |
1/4 cup pickle relish |
2 eggs, hard boiled, peeled, diced |
1/2 teaspoon cumin |
1/2 teaspoon chili powder, chipotle variety |
1 tablespoon janes's crazy salt, or to taste |
Directions:
1. Combine cooked, sliced potatoes with bacon, vegetables, and eggs. Set aside. 2. In small bowl, combine mayo, BBQ sauce, mustard, vinegar, relish, cumin, chipotle chili powder, and Crazy Salt. Pour dressing over potatoes and veggies, gently mix. Chill before serving. |
