Smoky Cheddar And Bacon Fondue |

Fondues and Hot Pots by Susan Fuller Slack Ingredients:
1 lb smoked or plain cheddar cheese, shredded |
1 slightly rounded tablespoon all-purpose flour |
2 shallots or 1 small onion, minced |
1 large clove garlic, finely minced |
1 cup hard cider, lager beer or sparkling cider |
1 tsp fresh lemon juice |
1-2 tsp grainy mustard, or to taste |
6 slices premium bacon, cooked crispy, chopped |
1/4 cup minced. re-hydrated sun-dried tomatoes |
Directions:
1. Combine the cheese and flour in a large bowl; set aside. 2. Melt the butter in a medium heavy saucepan over medium heat. Saute the shallots and garlic for 2 minutes. Pour in the cider. Simmer for 1 minute. Reduce the heat; discard the garlic. Add the cheese in handfuls. Gently stir after each addition until the cheese melts. Add the lemon juice, mustard, bacon and sun-dried tomatoes. Cook, stirring until fondue begins to bubble around the edge, 1 - 2 minutes, do not boil. 3. Pour into warmed fondu pot. Serve. |
