A weight Watchers Cook Book special Ingredients:
1 tsp canola oil |
1 large onion (chopped) |
2 cloves garlic (minced) |
14 1/2 oz chicken broth |
2 cups kernel corn |
15 oz can black beans |
1 cup salsa |
1 tsp chilli powder |
1 tsp ground cumin |
180 g pork chop (chopped) |
3 tbls cilantro |
1 tsp lime juice |
4 tbls fat free sour cream |
2 tbls scallions (chopped) |
Directions:
1. Heat oil in a saucepan, add onion and garlic until golden brown. 2. Add water to broth to equal 2 cups 3. Add broth, corn, beans, salsa, chilli, and cumin to the saucepan and bring to a boil. 4. Reduce heat and simmer covered until the flavors are blended (about 5 minutes). 5. Stir in the pork, cilantro, and lime juice. 6. Simmer until heated through (about 3 minutes) 7. Serve in bowls, top with sour cream and scallions. |
