Smoky Apple and Cheddar Salad |

From Woman's World mag 3/16/09. A nice salad for St. Patrick's Day. Ingredients:
4 slices bacon, cut into 1 inch pieces |
4 ounces rectangular chunk cheddar cheese, halved |
1/4 cup olive oil |
2 tablespoons white vinegar |
2 tablespoons chopped fresh dill |
2 tablespoons finely chopped onions |
1 teaspoon sugar |
1/4 teaspoon salt |
1/4 teaspoon pepper |
1 head green leaf lettuce, torn, 8 cups |
1 gala apples, cored, cut into 1/2 inch wedges |
Directions:
1. In large nonstick skillet over medium high heat, cook bacon, stirring frequently, until crisp, 8-10 minutes. Drain on paper towels. 2. Cut cheese into 1/4 inch thick slices. Using 1 1/2 inch shamrock-shaped cookie cutter, cut out 16 shamrocks. 3. In large bowl, whisk oil, vinegar, dill, onion, sugar, salt and pepper. Add lettuce, apple and bacon; toss to coat with dressing. Add shamrocks; toss gently. |
