Smokey Corn Chowder

comfort food, nothing better on a cool fall day than a nice warm bowl of chowder
Ingredients:
1 tsbp olive oil
1 tbsp butter
1 onion finely chopped
1 carrot finely chopped
1 stalk celery finely chopped
2 cloves garlic finely chopped
1/2 cup red pepper finely chopped
1/2 cup green pepper finely chopped
4 cups ham bone stock
2 1/2 cups corn kernels
1 cup cubed ham
1 cup cooked rice
Directions:
1. Heat oil and butter in the bottom of a heavy bottomed saucepan
2. Add onion, carrot, celery, garlic, red pepper, and green pepper
3. Cover and let cook over low heat for 5-10 minutes until veggies start to soften
4. Add 2 cups ham stock and bring to a boil over medium high heat
5. Reduce heat to medium, cover and simmer for 20 minutes
6. Puree 2 cups corn and 2 cups ham stock in your blender and add to soup
7. Add remaining 1/2 cup corn, cubed ham, return to a simmer for 20 minutes.
8. Add cooked rice and heat until good and hot.
9. Enjoy!
