A nice pizza alternative- light full of protein, vegetarian. From Eating Well Magazine. Ingredients:
1 tortilla |
4 oz corn kernels |
1 oz black beans |
3/4 oz cheese |
2 tablespoons barbecue sauce |
2 basil leaves |
Directions:
1. Toast the tortilla so it's a bit crispy. 2. Mix corn, beans and bbq sauce. 3. Saute this together if you'd like. Add Tabasco and garlic and herbs if you want. 4. Spread bean mixture on tortilla. 5. Top with cheese. 6. Melt cheese in broiler. 7. I make it all in the toaster oven- simple, easy, quick, and eco friendly. |
