Smoked Wahoo Potato Salad |

i make this salad with left over smoked wahoo , but you can use any kind of smoked fish or even canned tunna Ingredients:
3 large potatoes |
1 cup chopped smoked wahoo |
1/4 cup chopped black olives |
2 chopped green chilies |
2 tablespoons pickled capers |
1 garlic clove, crushed |
salt and pepper |
2 tablespoons olive oil |
2 lemons, juice of |
1 teaspoon sumac |
Directions:
1. peel potatoes and chop into small cubes. 2. boil for 15 minutes. 3. drain and let it cool for about 10 minutes. 4. add wahoo fillet, olives , capers , green chili 5. mix dressing and add to the salad 6. serve cold. |
