Smoked Turkey Wings And Coucous Soup |

Went shopping and saw all kinds of smoked turkey parts which were new to me but I bought 'em . So I said to myself._Self, you can do something with these. And I did . And here it is. Ingredients:
1 large package smoked turkey wings or necks or both |
i used my biggest spaghetti pot with the insert |
1 lb of fresh or 2 to 3 boxes of chopped spinach |
2 xtra large carrots |
bunch of cilanto - washed de-stemmed and cut in chiffonade style |
no salt |
1 box coucous |
Directions:
1. Place turkey and scubbed carrots (whole) into insert 2. Replace insert into pot 3. Add 2 cans chicken broth and water to as high as you think is safe 4. and will not boil over 5. Bring to boil and lower immediately to med-low or low 6. Add chiffonade of cilantro 7. Steam spinach in another pot and when cool squeeze the dickens out of it and set aside 8. Monitor soup every 15 minutes and if water is boiling away add either water or broth to keep as much water as possible 9. After an hour raise heat to medium and remove carrots with tongs 10. cool and chop into nice even little squares 11. put aside 12. turn off soup remove from hot burner 13. remove insert with turkey 14. when you are able to touch the bones remove meat 15. add to bowl with carrots 16. When couscous is done (add broth if needed to bring to the consistency you like) 17. Carrots and meat into the pot with two turns of the pepper mill 18. Toast crispy bread and but one piece on bottom of eachh serving dish 19. Place soup in warmed serving bowl and serve piping hot 20. Soup is smokey tasting and filling so only a light green salad if you wish. 21. Hope you like it. 22. Sprinkle grated cheese on top of toast 23. Stir in spinach 24. wait 5 minutes 25. Pour in box of couscous 26. Stir |
