Smoked Turkey Salad With Pecans And Grapes

Nice arraingment of fruit, nuts, greens and poultry.
Ingredients:
turkey breast, cut in battonette
hickory wood chips
mesquete wood chips
charcoal
mustard
sesame oil
drippings from the turkey
pecans, toasted
grapes
tarragon vinegar
olive oil
(optional: arugula and belgium endive)
Directions:
1. smoke the turkey (outdoors of course) in the hickory wood chips,
2. mesquete wood chips and charcoal (medium)
3. catch the drippins in a pan, save
4. when smoked, prepare in cubes
5. DRESSING:
6. take pan drippins and add to olive oil and sesame oil.
7. mix the oils with the tarragon vinegar
8. Top with pecan and grapes (red seedless)
9. Optional: place ingrediants together on a bed of
10. baby arugula and endive
