Smoked Trout Salad Sandwiches

The slight sweetness of the apple and the crunch of the carrot mix well with trout's delicate flavor to provide an elegant lunchtime treat.
Ingredients:
1 (8-ounce) package smoked trout
2/3 cup reduced-fat sour cream
2 tablespoons reduced-fat mayonnaise
1 1/2 cups matchstick-cut carrots
1/4 cup finely diced red onion
1 cup diced peeled granny smith apple (about 1 medium)
1/4 cup finely chopped walnuts, toasted
16 slices thin whole wheat bread (such as pepperidge farm very thin)
8 boston lettuce leaves
Directions:
1. Process first 3 ingredients in a food processor until smooth. Combine puréed trout mixture, carrots, and next 3 ingredients in a bowl; toss well.
2. Top each of 8 bread slices with a lettuce leaf. Spoon trout salad evenly over lettuce; top with remaining bread slices.
