Thisis a great grilling salsa. After your meats ahve grilled, push teh coals to one side and prepare this over indirect heat. Wonderful! Ingredients:
3 or 4 tomatoes, sliced thick |
1/2 large onion sliced into thick rings |
2 or more jalapeno chiles, split |
1 tbs fresh lime juice |
1/2 cup frresh cilantro, chopped |
Directions:
1. Push coals to one side fo grill and place onions, tomatoes, and jalapenos to cook on indrect heat. Close lid and let smoke for about 15 minutes. The more smoke teh better. Turn once. 2. Remove skin from tomatoes and place all ingredients except cilantro in food processor. 3. Pulse until chunky, not pureed 4. Add cilantro and stir. Salt to taste. 5. Keep in refrigerator |
