Smoked Sausage With White Beans |

Pure comfort food, absolutely meant to be served with a piping hot pan of cornbread. Ingredients:
1/2 lb dry white bean, soaked overnight |
1 tablespoon oil |
1 lb smoked sausage, quartered and sliced |
1 large yellow onion, diced |
1/3 cup green pepper, diced |
3 garlic cloves, minced |
1 tablespoon cumin |
1 teaspoon black pepper |
1/4 teaspoon cayenne pepper |
1/4 cup green onion, sliced |
1 1/2 teaspoons salt |
Directions:
1. Heat oil in a large pot. Add sausage and cook 3 - 4 minutes. Add onion, green pepper and garlic. Cook 5 more minutes. 2. Stir in beans, cumin, and peppers. Add water just to cover. Bring to a boil, reduce heat to medium low, cover and simmer for at least 2 to 3 hours, until beans are tender and creamy. 3. Just before serving, stir in green onions and salt. |
