I bought some summer sausage on a BOGO sale and it stimulated my imagination today. I made this simple stew and was shocked at how wonderful it tasted. It is quick, easy, and hearty. Would be even better with some good French or Italian Bread.
Ingredients:
1 lb fully cooked smoked sausage
4 cups hot water
1 (15 ounce) can mixed vegetables, drained
1/2 teaspoon ground black pepper
1 teaspoon ham soup base
1 teaspoon msg (optional)
8 ounces tomato sauce
1/2 cup orzo pasta
Directions:
1. Quarter the long links of sausage then cut into about 1/4 in slices.
2. Brown sausage lightly in a 4 quart pan or larger, browning enhances the flavor
3. Add hot water.
4. Add drained mixed vegetables.
5. Add black pepper, ham soup base, MSG, and tomato sauce.
6. Add Orzo.
7. Cook 10 minutes over medium heat until Orzo is almost tender.
8. Turn down to to a slow simmer for another 15 minutes.
9. Stew will slowly thicken on it's own during the simmering process.
