I was looking for a soup recipe and just couldn't find what I wanted so I decided to make one up. This is what I came up with. I used the veggies and herbs I had on hand but I think you could change this to suit your preferences and it would still be good. Ingredients:
1 lb smoked sausage, cut into 1/4 slices |
1 medium onion |
3 cloves garlic, minced |
2 medium carrots, chopped |
4 medium potatoes, cut into large chunks |
4 cups chicken broth |
2 cups frozen corn |
1 tablespoon dried parsley |
2 sprigs fresh rosemary or 1 teaspoon dried rosemary |
salt and pepper |
Directions:
1. In a dutch oven or large saucepan, saute the sausage until browned. Remove from pan and set aside. Drain all but 1 teaspoon of the grease and cook the onion and garlic for a couple of minutes, stirring frequently. You could drain all the grease and just add a little oil to saute the onions and garlic. 2. Stir the carrots into the pan and saute for another 2 minutes. Add the broth and potatoes. When the potatoes and carrots are nearly as tender as you would like; add the corn, parsley, rosemary and salt and pepper. Cook for 3-4 more minutes. |
