Smoked Sausage And Vegetable Soup |

A Good, Hearty soup. Serve with buttered slices of a Multi-grain bread. Ingredients:
2 - 2 1/2 liters water |
smoked sausage, (approx. 500grams/ four links) - sliced. i like using farmer style sausage, but feel free to use your favorite, ie; hot italian, kalbasa etc |
potatoes, 3-4, cubed -small - bite size |
carrots, 3 - sliced |
yellow or green beans - 500grams - cut into one inch pieces |
mushrooms (optional, 10 to 12 - sliced) |
cabbage - 3-4 leafs or approx. 2-3 cups - sliced thin |
onion, half cup - chopped |
garlic, 2 cloves - finely chopped |
thyme leaves - 1/2 tsp - **preferably fresh |
marjoram - 1tsp |
sea salt - 1 1/2 tsp |
white pepper - 1/2 tsp |
bay leaves - 2 |
Directions:
1. In a large soup pot combine the water, farmer sausage, carrots, green beans, onion, garlic, sea salt, white pepper, bay leaves, fresh thyme and marjoram 2. Bring water to a biol and then cover, reduce heat and simmer for 30 minutes 3. After simmering for 30 minutes, add the potatoes, cabbage and if deciding to add to soup, add mushrooms as well 4. Increase heat and return to a boil 5. When boiling is achieved, reduce heat, cover pot and simmer for approximately 30 more minutes, or until all vegetables are cooked tender 6. Season to taste with salt and pepper |
