Smoked Sausage And Potato Soup |

This soup is simple comfort food . It's easy and fairly quick to prepare, but tastes like it took all day. Serve with some crusty bread for a perfect rainy day dinner. Ingredients:
3 tbsp unsalted butter |
3 tbsp flour |
2 stalks celery, diced small |
1 med-large onion, diced small |
4-5 small-med potatoes, 1/2 inch square chunks (peel or don't, doesn't matter) |
2 pkgs smoked sausage, diced 1/2-1 inch chunks |
4 cups beef broth (low sodium) |
2 cups 2% or whole milk |
16 oz sharp cheddar cheese, shredded |
kosher or sea salt to taste |
pepper to taste |
Directions:
1. Put a dutch oven over medium heat. 2. Add butter, onions, and celery and a pinch or two of salt - sweat onions and celery until they are translucent 3. Add flour, sprinkling evenly over celery and onions, stir until flour is fully mixed in 4. Add broth, bring to a boil, pepper as desired 5. Add potatoes, cover, and lower heat to a simmer, allow potatoes to cook for 10 minutes 6. Add sausage, allow to cook for 10 minutes 7. Make sure the soup to this point is at a low simmer and add the milk, stir 8. Add cheese, a handful at a time while stirring, and allow each handful to melt into the soup 9. Check the taste, adjust salt/pepper and leave on low heat until ready to serve |
