Smoked Salmon With Cognac Caraway Mayonnaise and Toasted French |

From Gourmet, December 1995. Ingredients:
1 teaspoon caraway seed |
1/2 cup mayonnaise |
3 tablespoons sour cream |
1 tablespoon fresh dill, chopped |
2 teaspoons cognac |
2 lbs smoked chinook salmon |
lemon wedge, garnish |
dill weed, sprigs garnish |
french bread, loaf toasted |
Directions:
1. With a mortar and pestle or in an electric spice grinder grind caraway seeds fine and in a small bowl stir together with mayonnaise, sour cream, dill, and cognac. 2. Arrange salmon on a cutting board or platter and garnish with dill sprigs and lemon wedges. 3. Serve salmon, sliced thin, with mayonnaise and french bread. |
