My husband's uncle made this spread for us whenever we visited while we lived in Seattle. It has a nice combination of flavors, and even people who aren't particularly fish lovers like this spread. I haven't made this for a while - so when I do, I may tweak the recipe again. Read more . - and of course will get a picture to post! ;) Ingredients:
4 oz smoked salmon |
8 oz cream cheese |
1 t fresh lemon juice |
1 t milk (or white wine) |
2 t small capers, drained |
2 t red onion, finely diced |
salt & pepper to taste |
pinch of cayenne (optional) |
1 t chopped parsley (garnish) |
Directions:
1. Cream together the cream cheese, lemon, juice, salt, pepper, and milk. 2. Flake apart the smoked salmon and mix into the cheese base along with the capers and red onion. Add a bit more milk to achieve spread consistency that you want. I've also used a bit of a white wine in place of milk to thin out the cream cheese. 3. Garnish with some chopped parsley - or even some chopped chives. 4. Serve chiled with Triscuits, bagel chips, artisan bread, etc. |
