Smoked Salmon Summer Salad |

A wonderful salad that's perfect for those hot summer days when you don't want to heat up the kitchen. It's delicious. Found on the internet Ingredients:
6 cups mixed baby salad greens |
1/2 cup washed, fresh sugar snap peas |
6 sliced, radishes |
1/3 cup each: teardrop yellow or red tomatoes, sliced celery and wedge sliced red onions |
1 (3-oz.) pouch smoked salmon, flaked into bite-size pieces |
summer dill dressing (see recipe below) or favorite dressing |
Directions:
1. Arrange salad greens onto two dinner plates. Top greens with snap peas, radishes, tomatoes, celery and onions. Evenly divide the smoked salmon over salads. Drizzle salad with desired amount of Summer Dill dressing. 2. Summer Dill Dressing 3. 1/3 cup seasoned rice vinegar 4. 2 Tablespoons minced fresh shallots or onion 5. 1/2 Tablespoon chopped fresh dill 6. 1/2 teaspoon garlic salt 7. 1/4 cup vegetable oil 8. In food processor, mix all ingredients except oil. Continue mixing and add oil in a slow, steady stream. Continue mixing for 30 seconds. |
