Smoked Salmon Stuffed Cherry Tomatoes

These are easy to make and never fail to impress. Just don't tell how easy they are!
Ingredients:
2 pints cherry tomatoes
8 ounces cream cheese, softened
1 (7 1/2 ounce) can pink salmon, drained, skin and bones removed and flaked
3 tablespoons fresh parsley, minced
2 tablespoons green or red bell pepper, minced
2 teaspoons onion, grated
1 teaspoon lemon juice
1/2 teaspoon liquid smoke (hickory) flavoring
Directions:
1. In bowl, combine cream cheese, flaked salmon, parsley, bell pepper, onion, lemon juice and Liquid Smoke. Mix well. Cover and chill overnight.
2. Make a slice across the stem end of each cherry tomato.
3. WIth a small spoon, scoop seeds from tomatoes.
4. Invert tomatoes onto paper towels to drain.
5. (Hint, if your tomatoes are not as ripe or sweet as you like, sprinkle inside of tomatoes lightly with granulated sugar before draining.)
6. Pipe salmon mixture into tomato cups .
7. Garnish with fresh parsley or dill sprigs if desired.
