A great smoked salmon cheese ball covered with a colorful blend of parsley, chopped almonds and crushed pretzels. Always a big hit at parties and pot lucks! Note: Cook time is chill time. Ingredients:
1 (15 1/2 ounce) can pink salmon, drained and flaked |
1 (8 ounce) package cream cheese, softened |
1 tablespoon red onion, grated |
1 tablespoon horseradish |
1/4 teaspoon salt |
1 tablespoon lemon juice |
1/4 teaspoon liquid smoke |
1/4 cup almonds, finely chopped (from a package of sliced almonds) |
2 tablespoons fresh parsley, chopped |
1/4 cup pretzel, thins (crushed) |
Directions:
1. Remove skin and bones from salmon. Combine all ingredients (except nuts, parsley and pretzels) in a bowl. Mix well with a fork. Form into a half round ball. Wrap with plastic wrap and chill for 2 hours. Mix nuts, parsley and crushed pretzels together, then put on top of chilled ball, pressing lightly to adhere. Serve with Ritz crackers & enjoy! |
