We tried this dish at a local restaurant once, and it was super easy to reproduce. Like everything ingenious it's very simple and delicious. I call it Atkins' Bagel Ingredients:
4 eggs |
1/4 cup milk |
butter |
1/2 cup smoked salmon trimmings (sold at any self-respecting grocery store) |
3-4 thin scallions chopped |
1/4 pack of plain cream cheese, chunked |
salt, pepper to taste |
capers (optional) |
Directions:
1. Whisk eggs and milk, add a pinch of salt and pepper and set aside 2. Melt butter in a skillet and drop in salmon chunks 3. Cook until they loose their bright color, for about 2-3 minutes 4. Drop in scallions and cook another minute 5. Pour eggs over the salmon and onions, lower the heat and add the cream cheese. 6. Scramble gently until all egg is cooked but not too firm. Don't mash too much, you want cream cheese to remain in chunks as much as possible 7. Add capers now, if you like 8. Serve hot, with tomato slices and pickle on the side |
