These are a fun twist on lox and cream cheese and a colorful appetizer. Ingredients:
1 pound sliced smoked salmon |
1 cup smooth guacamole |
8 oz. cream cheese, softened to handle more easily |
+/- 1 tsp tabasco sauce |
minced flatleaf parsley |
sesame seeds |
thin, crisp crackers (i like ones with sesame seeds for this best) |
Directions:
1. Combine the guacamole with the cream cheese and Tabasco. 2. Put this mixture into a plastic bag and cut a corner off so you can use it as a piping bag. 3. Lay out slices of the baked salmon in pairs and then pipe some of the guacamole mix on the end of a short side of the salmon. 4. Roll the salmon up starting at the filled end. 5. Dip each roll into the sesame seeds on the side and roll. 6. Sprinkle each top with a bit of the parsley. 7. Place each roll atop a cracker. 8. Arrange on a platter and chill. |
